We don’t usually geek out about bean varieties, but this one from the family of Daniel Perez is going to be an exception. They’ve sent us a Pacamara bean that is really quite large and, as far as we can tell, works best for medium and darker roasts. There, you’ll find sweet and savory flavors of roasted almond, maple, brown sugar, and licorice.
