We got a small shipment of these interesting beans from Panama’s Damarli Estate. If you haven’t tried a natural-processed coffee before, you’re in for a treat. Instead of the usual chocolaty profile that we gravitate toward, this brew shows off floral, winy, and juicy fruit notes. We recommend against light roasts here because the flavor can skew very bright and lemony (but if that’s your thing, go for it). Medium roasts tone down the acidity, and start to introduce some spicy/chocolaty notes. You’ll find some smoky chocolate flavors once the bean enters dark roast territory, but the floral, fruity notes that make it so special become muted (so we wouldn’t recommend going dark on this one. We’ve got other beans that are better for dark roasts).
